Springtime Goodness Salad

You know the drill – work, errands, maybe a workout if you’re feeling ambitious. Eating healthy can feel like just another thing to do. But this salad is life-changing, I swear! It’s fresh, yummy, and totally portable for those on-the-go days.

Springtime Goodness Salad

  • A bed of your favorite greens (spinach, arugula… get fancy if you want)
  • Handful of chopped asparagus (roasting is optional, but it adds SO much flavor)
  • Sliced strawberries
  • Crumbled feta cheese
  • A sprinkle of sunflower seeds or toasted almonds
  • Light balsamic vinaigrette
  • A spoonful of avocado

Toss it all together, or make it a mason jar salad for ultimate grab-and-go vibes. It’s got those spring flavors, a satisfying crunch, and enough protein to keep those hangry meltdowns at bay.

A fresh, yummy, salad for those on-the-go days

Ingredients

  • A bed of your favorite greens (spinach, arugula… get fancy if you want)
  • Handful of chopped asparagus (roasting is optional, but it adds SO much flavor)
  • Sliced strawberries
  • Crumbled feta cheese
  • A sprinkle of sunflower seeds or toasted almonds
  • Light balsamic vinaigrette

Instructions

Toss it all together, and put it in your bags.

Notes

Swap out your dressing for just lemon juice and olive oil

Add chickpeas to you salad for a little extra protein

Don’t like feta? Try goat cheese!
