You know the drill – work, errands, maybe a workout if you’re feeling ambitious. Eating healthy can feel like just another thing to do. But this salad is life-changing, I swear! It’s fresh, yummy, and totally portable for those on-the-go days.
Springtime Goodness Salad
- A bed of your favorite greens (spinach, arugula… get fancy if you want)
- Handful of chopped asparagus (roasting is optional, but it adds SO much flavor)
- Sliced strawberries
- Crumbled feta cheese
- A sprinkle of sunflower seeds or toasted almonds
- Light balsamic vinaigrette
- A spoonful of avocado
Toss it all together, or make it a mason jar salad for ultimate grab-and-go vibes. It’s got those spring flavors, a satisfying crunch, and enough protein to keep those hangry meltdowns at bay.
